Taco Tuesday honors Stacy Gilbert, supports Mary Grace Foundation

October 13, 2025

Celebrate Taco Tuesday on Oct. 21 and raise money to support families coping with a cancer diagnosis.

In loving memory of our good friend and parishioner Stacy Gilbert, the owner of Barrio’s food truck is bringing his delicious cuisine to St. Francis Xavier! Come and enjoy chicken, sirloin or black bean tacos and nachos, and a portion of the sales will benefit the Mary Grace Foundation.

Stacy, who would have turned 50 earlier this month, was a much-loved wife, mother and friend to so many at our parish and school, where she was an active volunteer and devoted Catholic. She died Aug. 24, 2024, after a courageous battle with breast cancer.

The Mary Grace Foundation was founded to honor another well-loved wife, mother and active parishioner who died after her own battle with breast cancer. Mary died Jan. 8, 2005, after a two-year battle with breast cancer, and friends, together with her husband Mike, launched the foundation to support those who have been affected by cancer with basic life necessities so they can focus on battling the disease. Financial assistance is available to cancer patients or their immediate family members who reside in Medina County, Ohio.
